zucchini casserole
Ingredients:
 100 g Zucchini
 50 g Mushrooms (optional)
 50 g Green Bell Pepper (optional)
 ½ Small onion (optional)
 100 g Chicken
 1 tbsp Olive Oil
 2 tbsp Marinara Sauce
Instructions:
  1. Shallow fry diced chicken pieces.
  2. In an oven safe bowl add thinly sliced zucchini and fried chicken.
  3. You can add thinly chopped/sliced vegies of your choice, eg. bell peppers, onions, shallow fried mushrooms etc.
  4. Add marinara sauce and olive oil, and give it a good mix.
  5. On the top, add handful of shredded mozzarella cheese.
  6. Bake at preheated oven at 180C for 20 min or until the cheese turns golden brown.
  7. Eat when hot, as it is or with a hot cup of tea.
